  • 2 boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tsp sea salt
  • ½ tsp garlic powder
  • ½ tsp dried rosemary
  • Juice of ½ lemon
  • For the Roasted Vegetables
  • 1 zucchini sliced
  • 1 cup Brussels sprouts halved
  • 1 cup carrots sliced
  • 1 tbsp coconut oil
  • ½ tsp sea salt
  • ½ tsp dried thyme

Instructions
 

  • 1️⃣ Preheat the ovenPreheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
  • 2️⃣ Prepare the chickenIn a small bowl, mix olive oil, sea salt, garlic powder, rosemary, and lemon juice. Rub this mixture evenly over the chicken thighs and set aside.
  • 3️⃣ Prepare the vegetablesIn a separate bowl, toss the zucchini, Brussels sprouts, and carrots with coconut oil, sea salt, and thyme. Spread them evenly on the baking sheet.
  • 4️⃣ Roast the mealPlace the seasoned chicken on the baking sheet with the vegetables. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender.
