For the Chicken:
- 2 bone-in skin-on chicken breasts
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
For the Garlic Butter:
- 3 tbsp unsalted butter softened
- 3 garlic cloves minced
- 1 tbsp fresh rosemary chopped
- 1 tbsp fresh thyme chopped
- 1 tbsp fresh parsley chopped
- Zest of 1 lemon
- Juice of ½ lemon
Preheat the Oven:Preheat your oven to 400°F (200°C).
Make the Garlic Butter:In a small bowl, mix butter, garlic, rosemary, thyme, parsley, lemon zest, and lemon juice until well combined.
Prepare the Chicken:Pat the chicken dry with a paper towel. Gently loosen the skin and spread the garlic butter under the skin, then rub some over the top.
Sear the Chicken:Heat olive oil in an ovenproof skillet over medium-high heat. Sear the chicken, skin-side down, for 3–4 minutes until golden brown.
Roast the Chicken:Flip the chicken and transfer the skillet to the oven. Roast for 25–30 minutes, or until the internal temperature reaches 165°F (75°C).
Let It Rest & Serve:Remove the chicken from the oven and let it rest for 5 minutes before serving. Enjoy!
